With over ten years of impressive culinary experience under his belt, Chef Edgar Mendez is taking this truck through town and introducing LA taco fans to an exciting Mexican delicacy; huitlacoche. It takes just one bite of these beautifully crafted creations to convince everyone that “corn smut” is actually quite delicious.
While his menu showcases extraordinarily tasty dishes with huitlacoche (which can be closely compared to truffles in appearance and flavor), he also offers a gourmet twist on several traditional dishes that will appease even the most anxious eaters; mole nachos, braised lamb burritos, and tacos with tender chicken, pork, and so much more.
